You all know I love oatmeal in all of its many forms…whether its a hot bowl of stovetop oats, chilly overnight oats, granola, granola bars, the list goes on! But, one of my favorites and my family’s favorites is baked oats! I can’t put my finger on it, but there’s something about them that’s just so perfect! Especially in the winter months, there’s nothing better. I like to serve them hot, and then eat the bars cold out of the fridge as leftovers!

These Baked Oatmeal Bars are my favorite! You can have them for breakfast, dessert, or a snack, and you can even change the chocolate chips and add in raisins, nuts, fruit, etc.! They have the perfect texture and flavor; they’re not too sweet, but they’re definitely dessert-worthy. Not to mention, they’re so easy to make; only 8 ingredients and one bowl!

  • Gluten free quick oats
  • Baking powder
  • Cinnamon
  • Almond milk
  • Maple syrup
  • Peanut butter
  • Dark chocolate chips

Baked Oatmeal Bars

Ingredients

Ingredients

  • 2 cups Gluten Free Quick Oats
  • 2+1/4 cups Unsweetened Vanilla Almond Milk
  • 1 tsp Baking Powder
  • 1/2 cup Maple Syrup
  • 1/2 cup Peanut Butter
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • 1/2 cup Dark Chocolate Chips

Method

Instructions

  • 1)

    Preheat oven to 350F.

  • 2)

    In a large mixing bowl, combine all ingredients except chocolate chips.

  • 3)

    Add in chocolate chips and stir thoroughly.

  • 4)

    Transfer to a lightly greased 8×8 pan and bake for 40 minutes.

Notes

Store in the fridge in an air tight container. Reheat for 45 seconds or eat cold.
