Ingredients
Wet Ingredients
- 2 Medium Ripe Bananas
- 2 Eggs
- 1/4 cup Melted Coconut Oil
- 1/2 cup Maple Syrup
Wet Ingredients
- 1.5 cups All Purpose Gluten Free Flour
- 1.5 tsp Baking Powder
- 1 tsp Cinnamon
Mix-In's
- 1/4 cup Dark Chocolate Chips
- 1/4 cup Blueberries
Method
- 1)
Preheat your oven to 350F and lightly grease a muffin tin.
- 2)
Mash bananas in a mixing bowl.
- 3)
Stir in 2 eggs, melted coconut oil, and maple syrup and combine thoroughly.
- 4)
Add in all-purpose gluten free flour, baking powder, and cinnamon.
- 5)
Stir all ingredients until batter is thoroughly combined.
- 6)
Split batter evenly between muffin tins.
- 7)
Add chocolate chips and blueberries on top of batter and use a toothpick to sink below the surface. Add more chocolate chips and blueberries on top.
- 8)
Bake for 30-35 minutes or until a knife comes out clean.
