Banana Bread Muffins: 3 Ways!

The best healthy banana bread recipe…but in muffin form! These muffins are fluffy, sweet, gluten-free, and dairy-free! All that stands between you and these muffins is seven ingredients and one bowl! Now let’s get to it!
You can make three types of muffins from one bowl with this recipe! I made chocolate chip, blueberry, and plain!

Ingredients You’ll Need For These Muffins:
-Coconut Oil
-Maple Syrup
-All Purpose Gluten Free Flour
-Baking Powder
-Dark Chocolate Chips, Blueberries
Equipment You’ll Need To Make These Muffins: 
-One mixing bowl
-Measuring cups and spoons
-Microwave or stove
-Muffin tin (I use this Jumbo Muffin Tin)
-Store these muffins in a loosely covered container for up to two days, then freeze in an air-tight container.

Banana Bread Muffins: 3 Ways

Wet Ingredients

  • 2 Medium Ripe Bananas
  • 2 Eggs
  • 1/4 cup Melted Coconut Oil
  • 1/2 cup Maple Syrup

Wet Ingredients

  • 1.5 cups All Purpose Gluten Free Flour
  • 1.5 tsp Baking Powder
  • 1 tsp Cinnamon


  • 1/4 cup Dark Chocolate Chips
  • 1/4 cup Blueberries


  • 1)

    Preheat your oven to 350F and lightly grease a muffin tin.

  • 2)

    Mash bananas in a mixing bowl.

  • 3)

    Stir in 2 eggs, melted coconut oil, and maple syrup and combine thoroughly.

  • 4)

    Add in all-purpose gluten free flour, baking powder, and cinnamon.

  • 5)

    Stir all ingredients until batter is thoroughly combined.

  • 6)

    Split batter evenly between muffin tins.

  • 7)

    Add chocolate chips and blueberries on top of batter and use a toothpick to sink below the surface. Add more chocolate chips and blueberries on top.

  • 8)

    Bake for 30-35 minutes or until a knife comes out clean.
