Blueberry Baked Oats

I absolutely love baked oats, and lately I’ve been trying to come up with new flavors to bake! These Blueberry Baked Oats are perfect for spring, they’re colorful, fresh, and so tasty! Plus, they only take 8 ingredients, one bowl, and 3 minutes in the microwave…sounds like a good deal to me!

I make my single serve baked oats in a small round glass baking dish, but you could use any microwave-safe bowl or baking dish.

Ingredients You’ll Need for these Blueberry Baked Oats:

  • Gluten free quick oats
  • Almond milk
  • Peanut butter
  • Maple syrup
  • Cinnamon
  • Vanilla
  • Baking powder
  • Blueberries

What You’ll Need to Make these Blueberry Baked Oats:

  • Microwave safe bowl or small glass baking dish
  • Small mixing bowl
  • Microwave

Storage:

  • If you have leftovers from these baked oats, cover the container with plastic wrap and refrigerate. If you want to make them ahead of time or the night before, you can do the same-they reheat very well!

Blueberry Baked Oats

  • Prep time: 7 minutes

  • 3/4 cup Gluten free quick oats
  • 1/2 cup Almond milk
  • 1 tbsp Peanut butter
  • 1/8 cup Maple syrup
  • 1/4 tsp Cinnamon
  • 1/2 tsp Vanilla extract
  • 1/4 tsp Baking powder
  • 1/4-1/2 cup Blueberries

Method

  • 1)

    In a small mixing bowl, combine all ingredients except blueberries.

  • 2)

    Fold in blueberries and transfer to a lightly greased baking dish or microwave safe bowl.

  • 3)

    Cover with a paper towel or microwave cover securely (blueberries might pop slightly) and microwave for 3 minutes.

  • 4)

    Serve warm, and top with yogurt and fresh fruit.
