Classic Banana Bread

Happy Wednesday friends! My all time favorite dessert is banana bread. I’ve never made a banana recipe that I didn’t love…chocolate chip, chocolate marble, plain banana, banana nut, anything, I love them all! It’s such a comforting dessert, perfect with a glass of milk, a scoop of ice cream, or a warm hot cocoa.

I also love that banana bread is a great way to use up extra bananas around your house that won’t get eaten before they go bad. For this recipe, you need 2 bananas. I like to use bananas that are about “halfway ripe” for banana bread. I look for bananas that have definite brown spots, but are still predominantly yellow.

This recipe only requires 11 ingredients and one bowl, so it’s great for a busy day/week. It’s also gluten free, dairy free, and sweetened with whole ingredients like bananas, maple syrup, and coconut sugar.

Ingredients You’ll Need to Make This Classic Banana Bread: 

  • Gluten Free All Purpose Flour
  • Baking Powder
  • Cinnamon
  • Nutmeg
  • Bananas
  • Eggs
  • Coconut Oil
  • Maple Syrup
  • Coconut Sugar
  • Vanilla Extract
  • Dark Chocolate Chips

What You’ll Need: 

  • One mixing bowl
  • Mixing spoon
  • Measuring spoons/cups
  • Microwave
  • Oven

Storage: 

  • Store this banana bread in the loaf tin, loosely covered with foil. If storing for more than three days, place in an airtight container in the freezer and defrost before eating.

Chocolate Chip Banana Bread

Ingredients

Wet Ingredients

  • 2 Medium Sized/ Medium Ripe Bananas
  • 2 Eggs
  • 1/4 cup Melted Coconut Oil
  • 1/4 cup Maple Syrup
  • 1 tsp Vanilla
  • 1 tbsp Coconut Sugar

Dry Ingredients

  • 1.5 cups Gluten Free All Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2-3/4 cup Dark Chocolate Chips

Method

  • 1)

    Preheat oven to 350F.

  • 2)

    In a mixing bowl, mash bananas until creamy.

  • 3)

    Add eggs, coconut oil, maple syrup, coconut sugar, and vanilla extract. Mix thoroughly.

  • 4)

    Add in flour, baking powder, cinnamon and nutmeg and stir until fully combined.

  • 5)

    Fold in chocolate chips.

  • 6)

    Transfer to a lightly greased (or parchment paper-lined) loaf tin.

  • 7)

    Bake for 40 minutes or until a knife comes out clean.
