Chocolate Covered Strawberry Cookies

Valentine’s Day is right around the corner, which means I’ve got to get all of my sweet recipes ready! Last year, I made these Chocolate Covered Strawberry Cookies and they were my favorite treat all month long during February. They’re sweet, fun to make, and they’re super festive for a Valentine’s Day dinner or gift.

These cookies taste just like a chocolate covered strawberry, with the tanginess of the berry that’s perfectly balanced with the sweetness of the chocolate. They also have a light layer of icing in between, which ties the whole flavor of the cookie together!

If you’re prepping these cookies in advance, I would recommend making the cookies and storing in an air tight container, and then topping with the icing and strawberries right before serving.

These cookies only require 8 ingredients and one bowl. Let me know if you love these as much as I do!

Ingredients

Dry Ingredients

  • 1.5 cups Gluten Free All Purpose Flour
  • 1/2 cup Cacao Powder
  • 1.5 tsp Baking Powder

Wet Ingredients

  • 2 Eggs
  • 1/4 cup Melted Coconut Oil
  • 1/4 cup Coconut Sugar
  • 1/2 cup Maple Syrup
  • 1/4 tsp Vanilla Extract

Toppings

  • 1/2 cup Vanilla Frosting of Choice (I used Simple Mills)
  • 3-4 Strawberries

Method

  • 1)

    Preheat oven to 350F.

  • 2)

    Line two baking sheets with parchment paper.

  • 3)

    Combine flour, cacao powder, and baking powder in a mixing bowl.

  • 4)

    Add eggs, coconut sugar, maple syrup, and vanilla extract to the bowl with the dry ingredients.

  • 5)

    Scoop cookies (about 2 tbsp/cookie) onto baking sheets.

  • 6)

    Bake for 8 minutes or until the tops of the cookies are set.

  • 7)

    Let cookies cool completely and top with frosting and strawberries.
