This year, I’ve been SO into creating new Christmas cookie recipes! Testing these chocolate snowball cookies was SO fun! Each time I tested them, they got even better. They are fluffy, and have a similar texture to brownies. They only require eight ingredients and two bowls, which is a plus because we’ve been doing so much baking lately so I’m all about easy recipes!
Ingredients for Chocolate Snowball Cookies:
All you need for these cookies is all purpose gluten free flour, cacao powder, baking soda, baking powder, maple syrup, ground flax seed meal, vanilla extract, coconut oil, and powdered sugar! I used Krusteaz all purpose gluten free flour, and Garden of Life flax seed meal for this recipe. Krusteaz flour always gives baked goods the best texture and consistency- it’s so reliable! I’ve also been loving Garden of Life flax seed meal lately since I’ve been using flax eggs in most of my recipes.
What You’ll Need to Make these Cookies:
You’ll need two mixing bowls, a spatula, one baking sheet, parchment paper, a microwave, and an oven! I also used a few small glass bowls for making the flax egg and melting the coconut oil.
Topping Ideas:
You can make this recipe into Snowball Cookies by just sprinkling powdered sugar on top! You can also make them into Snowball Whoopie Pies by adding vanilla frosting between two cookies and then topping with powdered sugar. Both ways are SO good!
Storage:
As far as storage goes, if you make them into cookies, I’d recommend storing in the freezer immediately and then thawing for 10-15 minutes before eating- they store wonderfully this way! If you make them into whoopie pies, I’d recommend storing in a loosely covered container for up to two days.
