These healthy cinnamon chip muffins are your coffee’s new best friend! There has NEVER been a better combination than a warm cup of coffee and one of these muffins. You’ll feel just like you’re sitting in a coffee shop!
Ingredients You’ll Need To Make These Muffins: 
-All-purpose gluten free flour
-Baking powder
-Maple syrup
-Coconut sugar
-Almond milk
-Vanilla extract
-Coconut oil
Equipment You’ll Need To Make These Muffins: 
-2 mixing bowls
-Microwave or stove
-Measuring spoons and cups

Gluten-Free Cinnamon Chip Muffins

  • Prep time: 15 minutes
  • Cook time: 25 minutes
  • Total time: 40 minutes
  • Serves: 6


Dry Ingredients

  • 1.5 cups All-purpose gluten free flour
  • 1.5 tsp Baking powder
  • 1 tsp Cinnamon

Wet Ingredients

  • 2 Eggs
  • 1/4 cup Maple syrup
  • 1/4 cup Coconut sugar
  • 1/4 cup Almond milk
  • 2 tsp Vanilla extract
  • 1/4 cup Melted coconut oil
  • 1/2 cup Cinnamon chips

Streusel Topping

  • 1/8 cup Almond flour, *Blanched
  • 1/8 cup Coconut sugar
  • 3/4 tsp Cinnamon
  • 2 tsp Melted coconut oil


  • 1)

    Preheat oven to 350F and lightly grease a muffin tin.

  • 2)

    Combine all-purpose gluten free flour, baking powder, and cinnamon in a mixing bowl.

  • 3)

    In a separate bowl, combine eggs, maple syrup, coconut sugar, almond milk, vanilla extract, and coconut oil.

  • 4)

    Combine wet and dry ingredients and fold in cinnamon chips.

  • 5)

    Separate batter evenly into muffin tin.

  • 6)

    In a small bowl, make the streusel topping by combining almond flour, coconut sugar, cinnamon, and coconut oil.

  • 7)

    Add streusel topping on top of muffin batter in muffin tin.

  • 8)

    Bake for 20-25 minutes or until a knife comes out clean.
