These banana pumpkin muffins are the perfect twist on the fall classic recipe! They’re light, fluffy, and pair perfectly with a cup of hot cocoa. They also freeze well so you can make a batch ahead of time if you need to! 

Ingredients You’ll Need: 

  • 1 Banana 
  • Pumpkin Puree
  • Eggs
  • Vanilla Extract
  • Maple Syrup 
  • Gluten Free All Purpose Flour
  • Baking Powder
  • Cinnamon
  • Nutmeg
  • Dark Chocolate Chips

Banana Pumpkin Muffins

  • Prep time: 15 minutes

Ingredients

Dry Ingredients

  • 1.5 cups All purpose gluten free flour
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg

Wet Ingredients

  • 1 Mashed medium banana
  • 1/2 cup Pumpkin puree
  • 2 Eggs
  • 2 tsp Vanilla extract
  • 1/2 cup Maple syrup

Mix-In's

  • 3/4 cup Dark chocolate chips

Method

  • 1)

    Preheat oven to 350 F.

  • 2)

    Combine wet ingredients.

  • 3)

    Combine dry ingredients in a separate bowl.

  • 4)

    Add wet ingredients to dry ingredients and stir thoroughly until well combined.

  • 5)

    Stir in chocolate chips.

  • 6)

    Scoop into lightly greased or lined muffin tins.

  • 7)

    Bake for 30 mins or until a knife comes out clean.
