Gluten-Free Peanut Butter Cup Cookies

You guys! It’s so snowy and cold outside, I think we ALL need some cookies, especially if they have PEANUT BUTTER CUPS in them! These cookies are insanely good, and they’re so easy to make. All you need is 10 ingredients, 1 bowl, and about half an hour and you’ll have cookies in your hands! 

Ingredients You’ll Need: 

  • All purpose gluten free flour 
  • Baking soda
  • Salt
  • Coconut sugar 
  • Vanilla extract 
  • Eggs
  • Peanut butter (creamy!) 
  • Coconut oil or butter 
  • Maple syrup 
  • PB cups 

Tools You’ll Need: 

  • Mixing bowl 
  • Measuring cups + spoons 
  • Microwave 
  • Oven 
  • Cookie sheet 
  • Sharp knife

Storage Tips: 

  • I’d recommend storing these cookies in a loosely covered (not air-tight) container for 2-3 days, then transferring to a Ziplock bag in the freezer after that!

Gluten-Free Peanut Butter Cup Cookies

Ingredients

Dry Ingredients

  • 2 cups All purpose gluten free flour
  • 3/4 tsp Baking soda
  • 3/4 tsp Salt

Wet Ingredients

  • 1 Egg
  • 3/4 cup Coconut sugar
  • 1/3 cup Maple syrup
  • 2 tsp Vanilla extract
  • 1/4 cup Peanut butter
  • 1/4 cup Melted butter or coconut oil
  • 9 Chopped peanut butter cups

Method

Instructions

  • 1)

    Preheat oven to 350F and line a baking sheet with parchment paper.

  • 2)

    In a mixing bowl, combine dry ingredients (flour, baking soda, salt).

  • 3)

    Add wet ingredients (egg, coconut sugar, maple syrup, vanilla extract, butter/coconut oil, peanut butter) to bowl (or use a separate bowl if you’d like). 

  • 4)

    Stir to thoroughly combine all ingredients.

  • 5)

    Using a cutting board and semi-sharp knife, chop up peanut butter cups into chocolate chip-sized pieces. 

  • 6)

    Fold PB cup pieces into batter.

  • 7)

    Scoop onto cookie sheet and flatten into a cookie shape using a silicon spatula. 

  • 8)

    Bake for about 13 minutes or until the tops of the cookies are golden-brown!
