Healthy Copycat Junior Mints

I don’t know about you guys, but Junior Mints were my FAV movie theatre snack when I was little. I had no interest in popcorn, soda, etc, it was all about Junior Mints. When my family would walk into the theatre, I would head straight for the snack counter and secure the goods…so naturally, 20-year old me had to recreate them in a healthier version.

These junior mints have 4 ingredients, they’re low in sugar, and have the same sweet, minty taste! For this recipe, I used two of my absolute favorite brands, McCormick Spice and Silk

 

Ingredients You’ll Need for these Healthy Copycat Junior Mints:

  • Vanilla Yogurt
  • Peppermint Extract
  • Coconut Sugar
  • Dark Chocolate Chips

What You’ll Need to make these Healthy Copycat Junior Mints: 

  • 2 small-medium size bowls
  • Freezer
  • Microwave

Storage:

  • I would recommend storing these in the freezer, for as long as you’d like! They will defrost pretty quickly, so I’d recommend taking them out of the freezer just 5-7 minutes before eating!

Healthy Copycat Junior Mints

  • Prep time: 10 hours
  • Cook time: 2 hours
  • Total time: 2 hours 10 minutes

Ingredients

  • 1/3 cup Vanilla Yogurt , (I used Silk Vanilla Almond Milk Yogurt)
  • 3/4 tsp Peppermint Extract
  • 1 tsp Coconut Sugar
  • 1/2 cup Dark Chocolate Chips

Method

Instructions

  • 1)

    In a small bowl, combine yogurt, peppermint extract, and coconut sugar.

  • 2)

    Scoop 1 tsp amounts onto a parchment paper-lined flat plate or baking sheet, creating flat, round disks.

  • 3)

    Freeze for 2-3 hours or until disks are completely frozen.

  • 4)

    Once disks are frozen, melt 1/2 cup dark chocolate chips and allow to cool for 2 minutes.

  • 5)

    Remove yogurt disks from the freezer.

  • 6)

    Carefully coat each yogurt disk by dipping into melted chocolate and using two forks to remove.

  • 7)

    Place disks back onto parchment paper-lined sheet and replace in freezer.

  • 8)

    Freeze for an additional hour or until chocolate is frozen.

  • 9)

    Remove from freezer and allow mints to defrost for 2-3 minutes…then dig in!
