Today’s the day! Finally making a permanent blog home for my most popular recipe EVER…Microwave Baked Oats! This recipe is seriously like having dessert for breakfast. It’s got the same flavor and texture of oven baked oatmeal, but it’s ready in 10 minutes instead of an hour! 

There are so many variations of this recipe, I will probably have to make a Baked Oatmeal tab on the blog, but for now, here it is! ENJOY and be sure to tag me on Instagram if you make this recipe! 

Ingredients You’ll Need for these Baked Oats: 

  • Quick oats
  • Almond milk 
  • Maple syrup
  • Peanut butter
  • Baking powder
  • Cinnamon
  • Vanilla extract
  • Dark chocolate chips   

 Tools You’ll Need for these Baked Oats: 

  • Microwave safe dish/bowl 
  • Measuring spoons and cups 
  • Microwave 

Storage Tips:

  • You can store these baked oats in the fridge in the microwave safe dish, covered loosely with foil!

Microwave Baked Oats

  • Prep time: 7 minutes
  • Cook time: 3 minutes
  • Total time: 10 minutes

Ingredients

  • 3/4 cup Quick oats, If you don't have quick oats, you can blend rolled oats/old fashioned oats
  • 1/2 cup Almond milk, Any milk would work here!
  • 1/8 cup Maple syrup
  • 2 tbsp Creamy peanut butter
  • 1/4 tsp Baking powder
  • 1/4 tsp Cinnamon
  • 1/4 tsp Vanilla extract
  • 1 handful Dark chocolate chips

Method

Instructions

  • 1)

    Lightly grease a microwave safe dish, ramekin, or bowl with coconut oil or cooking spray.

  • 2)

    Combine oats, almond milk, maple syrup, and peanut butter in the dish.

  • 3)

    Then, add in baking powder, cinnamon, and vanilla. 

  • 4)

    Combine all ingredients, then fold in chocolate chips. 

  • 5)

    Cover with a paper towel and microwave on full power for 3 minutes.

  • 6)

    Enjoy!
