Now that it’s officially winter and it’s snowy and cold, I’m all about the cozy recipes, especially for breakfast! In my family, we LOVE to make a big pan of baked oatmeal every Saturday or Sunday morning. It’s such a cozy, comforting breakfast and we just love it. Lately, I’ve also been making single serve baked oats in the microwave during the week.
The big pan in the oven takes 40 minutes to bake, so when I’m busier during the week, I like to make these smaller sizes. This week’s flavor is Sugar + Spice! It’s got the spice of cinnamon and nutmeg and the sweetness of coconut sugar and a little bit of maple syrup to perfectly balance each other out.
I topped mine with vanilla almond milk yogurt and sprinkled with a cinnamon/coconut sugar mixture. Yum!
