The Best Gluten Free Birthday Cake

Even if it’s not your birthday, this cake is for YOU! I’m a big fan of celebrating all happy moments in life, even the smallest happy moments: a good grade, finishing a big project, getting a new job, making a big decision, starting something new, etc. Especially this year, it’s so important to celebrate the happy things that come our way. You’ll never regret taking a few minutes out of your day to celebrate something, especially if it’s with people you love! I love to go out for ice cream or make a fancy treat every time a celebration is in order. This cake is the PERFECT way to celebrate! 

It’s fluffy, sweet, and the rainbow sprinkles will just make you smile! Plus, this cake is gluten and dairy free. It’s made with all purpose gluten free flour and almond flour, and it’s sweetened with coconut sugar and maple syrup. Let’s get to it! 

Ingredients You’ll Need to Make this Cake: 

  • Gluten free all purpose flour 
  • Almond flour 
  • Cacao powder 
  • Baking soda
  • Salt 
  • Eggs 
  • Maple syrup 
  • Coconut sugar 
  • Coconut oil 
  • Vanilla extract 
  • Almond milk 
  • Powdered sugar 
  • Sprinkles [optional, but highly recommended :)]

Equipment You’ll Need to Make this Cake: 

  • 2 small mixing bowls 
  • Oven 
  • Microwave 
  • 8×8 baking dish 
  • Measuring spoons and cups 
  • Spatula/mixing spoon 

Tips: 

  • When you’re making the frosting, be sparing when adding almond milk! I recommend adding 1 tbsp to start, then add about 1 tsp at a time from there. 
  • Store this cake by covering loosely with foil for 2-3 days, then transfer to the fridge!

Gluten Free Birthday Cake

Ingredients

Dry Ingredients

  • 1 cup All purpose gluten free flour
  • 1/2 cup Almond flour
  • 1/4 Cacao powder
  • 1 tsp Baking soda
  • 1/4 tsp Salt

Wet Ingredients

  • 2 Eggs
  • 1/4 cup Maple syrup
  • 1/4 cup Coconut sugar
  • 1/3 cup Melted coconut oil
  • 2 tsp Vanilla extract
  • 1/4 cup Unsweetened almond milk

Frosting Ingredients

  • 2.5 cups Powdered sugar, Add more if necessary
  • ~3 tbsp Almond milk
  • Rainbow sprinkles

  • 1)

    Preheat oven to 350 F.

  • 2)

    In a mixing bowl, combine all purpose gluten free flour, almond flour, cacao powder, baking soda, and salt.

  • 3)

    In a separate mixing bowl, combine eggs, maple syrup, coconut sugar, coconut oil, vanilla extract, and almond milk.

  • 4)

    Thoroughly combine dry and wet ingredients, then transfer to a lightly greased 8×8 baking dish, and smooth with a spatula. (Batter will be thicker than normal cake batter).

  • 5)

    Bake for 19-20 minutes or until a toothpick comes out clean.

  • 6)

    While the cake is in the oven, add 2-3 cups of powdered sugar to a mixing bowl. Add in 1 tbsp almond milk, and stir. Continue to add in almond milk 1 tsp at a time until frosting reaches a thick consistency.

  • 7)

    Allow cake to cool completely, then frost and add sprinkles.

  • 8)

    Celebrate and enjoy!
