The Fluffiest Oatmeal Cream Pies

Who remembers the oatmeal cream pie cookies that you could get at the vending machine at school? Well, they’re back and better than evaaaaa! These oatmeal cream pies are gluten and dairy free, and sweetened with maple syrup and coconut sugar. Plus, they’re ready in 30 minutes!

You guys know we’ve been doing two new recipes every week, but this week we’ve got THREE! All the details below!

Ingredients You’ll Need: 

-Oats

-Gluten free flour

-Baking powder

-Cinnamon

-Ginger

-Eggs

-Maple syrup

-Coconut sugar

-Coconut oil

Tools You’ll Need: 

-Oven

-Microwave or stovetop

-2 mixing bowls

-Measuring spoons and cups

Tips for This Recipe: 

-Make sure that cookies cool fully before frosting them!

-Make sure to mix everything thoroughly before scooping onto cookie sheet

-I recommend using parchment paper on the cookie sheet so that they don’t stick!

The Fluffiest Oatmeal Cream Pies

  • Prep time: 15 minutes
  • Cook time: 15 minutes
  • Total time: 30 minutes
  • Serves: 6 People

Ingredients

Dry Ingredients

  • 1 + 1/4 cup Oats
  • 1 cup Gluten free all purpose flour
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/2 tsp Ground ginger

Wet Ingredients

  • 1/4 cup Coconut sugar
  • 3 Eggs
  • 1/2 cup Maple syrup
  • 1/4 cup Melted coconut oil

Filling

  • 1/2 cup Vanilla frosting, *You can use any type of frosting!

Method

Instructions

  • 1)

    Preheat oven 350F.

  • 2)

    Line a baking sheet with parchment paper.

  • 3)

    In a mixing bowl, combine dry ingredients.

  • 4)

    In a separate bowl, combine wet ingredients, adding coconut oil last.

  • 5)

    Combine wet and dry ingredients and stir well.

  • 6)

    Scoop into cookies (about 3 tbsp/cookie).

  • 7)

    Bake for 13-14 minutes or until cookies are golden brown and the tops of the cookies are set.

  • 8)

    Allow cookies to cool completely. (You can put them in the fridge for 5 minutes to speed it up if you’d like!)

  • 9)

    Add as much frosting as your heart desires between two cookies and ENJOY!
