Costco Fruit Cake Recipe

I will call this week in my blog Costco week, since I made three Costco copycats-inspired recipes, I got a ton of requests to make another one which is the Costco Fruit Cake Recipe.

After I made the Costco Scalloped Potatoes Recipe and the Costco French Onion Soup Recipe, I saw that a lot of people loved them, Now it’s time to make a dessert inspired by Costco, The Costco Fruit Cake Recipe is like all cakes you can make at home, whats make it special the dried fruits inside the cake and on top.

To be honest, I tried my best to stick to the original recipe, which isn’t complicated at all. I even thought about adding fresh fruits like caramelized apples and strawberries. However, since you wanted the classic Costco Fruit Cake, I decided to stay true to the original and use dried fruits.

But of course, I got a little creative and used only the dried fruits I liked the most, such as apricots. I’ve made apricot cookies before and loved the taste, so I thought they would be perfect as both a filling and topping. I also used dried plums (prunes) and pecans. But as I said, it’s your cake, so it’s your choice! You can use any dried fruits you like.

I baked the dried fruits along with the cake and sugar powder. However, you have two choices: you can either bake the dried fruits with the cake, or you can add them as a topping after baking the cakes. Both methods work well. I just wanted my dried fruits to be more baked and have a slightly smoky flavor.

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup dried apricots, chopped
  • 1/2 cup dried plums (prunes), chopped
  • 1/2 cup pecans, chopped

For the Topping:

  • Remaining dried apricots, dried plums, and pecans (whole or chopped)
  • 1/4 cup brown sugar

Kitchen Equipment Needed:

  • 9-inch round cake pan
  • Mixing bowls
  • Electric mixer or whisk
  • Spatula
  • Wire rack for cooling

How to Make a Costco Fruit Cake Recipe?

Step 1:

First, preheat the oven to 350°F (175°C).

Get a round cake pan and make sure it’s all greased and floured.

Pour the batter into the cake pan and smooth it out with a spatula.

Step 9:

Next, let’s make it look pretty, Arrange the rest of the dried fruits and nuts on top of the cake, and sprinkle some brown sugar over them.

Step 10:

Put the cake in the oven and bake it for about 30-35 minutes.

Step 11:

Once it’s done, take the cake out of the oven and let it cool in the pan for 10 minutes.

Step 12:

Then, carefully move it onto a wire rack to cool completely. and enjoy it with your favorite drink with the family, the recipe is not perfect, but I tried my best to make almost fit the original one available at Cotsco, But I’m sure you will the taste. Enjoy
