First, let's make the yummy dressing! In a small bowl, mix together 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 teaspoon of mustard, 1 teaspoon of honey, a tiny bit of minced garlic, and a sprinkle of salt and pepper. Set it aside.

While preparing the dressing, cook the shrimp separately, sauté the shrimp until they are cooked through. Season them with salt and pepper, then set aside to cool slightly.

Next, in a big bowl, mix 2 cups of salad leaves, some halved cherry tomatoes (about 1 cup), sliced cucumber, a little bit of red onion, diced avocado, and some cooked chickpeas.
